Ingredients
- Half melon
- 5.6 oz ladyfingers
- 8.8 oz mascarpone (or philadelphia)
- 8.8 oz heavy cream
- 2.1 oz powdered sugar
- lemon juice
- 1 small glass limoncello
- crushed pistachios (as desired)
- mint (3-4 leaves, as desired)
Tools
- Baking Dish
- Mixer
- Bowl
Preparation
Peel the melon, remove the seeds, and cut it into small pieces.
Prepare a soaking mixture by combining the juice of half a lemon, limoncello, and a tablespoon or two of water in a deep plate.
In a bowl, mix the mascarpone with the powdered sugar.
Using the mixer, whip the cream until it becomes firm and fluffy. Incorporate it into the mascarpone with upward movements, until you get a soft and homogeneous cream.
Soak half of the ladyfingers in the limoncello mixture. Place them on the bottom of a baking dish, then add the melon pieces (1).
Cover with the mascarpone cream, using a spatula.
Continue with another layer of soaked ladyfingers, melon, and cream (2).
Cover with plastic wrap and let it rest in the refrigerator for at least 30-40 minutes.
Before serving, decorate the top with melon slices. If desired, sprinkle with crushed pistachios and add a few mint leaves.
The melon tiramisu is ready, fresh and delicious, perfect as a dessert!
Tips and Variations
You can replace the mascarpone (partially or entirely) with Philadelphia, ricotta, or Greek yogurt.
You can reduce the sugar amount to your liking.
For the soaking mixture, you can use another liqueur of your choice. If you want to eliminate alcohol, just use lemon or orange juice, diluted with a little water.
