Ingredients

  • 24 slices smoked bacon
  • 6 eggs
  • 0.85 cups heavy cream
  • 2 tablespoons Grana Padano cheese, grated
  • parsley (or chives, or other herbs)
  • salt
  • pepper

Preparation

  • Break the eggs into a bowl. Add the Grana Padano, salt, pepper, and a handful of chopped parsley (or other desired herbs).

    Whisk with a hand whisk, then add the cream and mix.

  • Take the muffin pan and line each mold with two slices of smoked bacon, crossing them to cover the entire surface (1).

  • Distribute the egg mixture in the molds with a small ladle. Do not fill them to the brim, leave a few millimeters free because the eggs will puff up while cooking (2).

  • Place in a convection oven at 355-375°F and bake the mini frittatas for 15-20 minutes, or until golden.

  • The mini frittatas in bacon are ready. Remove them gently from the molds and serve hot… enjoy!

Tips and Notes

You can store the mini frittatas for 1-2 days in the refrigerator, in an airtight container. However, I recommend baking them right before serving to keep the bacon crispy.

There’s no need to grease the molds because the bacon fat will prevent the mixture from sticking.

You can flavor the eggs with herbs of your choice: parsley, chives, basil, thyme, etc.
