Tasty monkfish skewers with shrimp and bacon… super easy to prepare, perfect for a lovely seafood menu. After cleaning, the monkfish and shrimp are marinated with white wine and lemon zest, making them even more flavorful and keeping them from drying out during cooking. The bacon slices complement the monkfish perfectly and will add a pleasant smoky aroma to the skewers… try this recipe, it’s simple, quick, but really delicious!

Ingredients
- 1 monkfish (approximately 14 oz)
- 7 oz shrimp (tails)
- 2 oz bacon
- Half glass white wine
- lemon zest
- 1 clove garlic (optional)
- extra virgin olive oil
- salt
- pepper

Preparation
Clean the monkfish by removing the dark skin and the central bone. Cut it into chunks and place it in a bowl.
Shell the shrimp tails, remove the black vein and wash them. Add them to the bowl with the monkfish.
Season with a drizzle of olive oil, salt, pepper, the grated zest of half a lemon, a clove of garlic if desired, and about half a glass of white wine. Mix and let them marinate in the refrigerator for about an hour (1).
After the time has passed, drain the fish from the marinade and assemble the skewers, alternating the monkfish, shrimp, and slices of bacon (2).
Heat a non-stick grill (or a wide pan) with a little oil, place the skewers on it and cook them for a few minutes, turning them a couple of times.
Cooking times vary depending on the size of the shrimp and fish pieces… in any case, do not extend them excessively, otherwise the monkfish will become dry and tough.
Monkfish, shrimp, and bacon skewers are ready, serve them hot, adding fresh herbs to taste or accompanying them with mayonnaise or yogurt sauce.
Tips and Notes
You can add rings of onion or pieces of bell pepper to the skewers.
You can enrich the marinade with your choice of herbs. If you are short on time, you can reduce the marinating time to 20-30 minutes.
You can also cook the skewers in a ventilated oven, for 12-15 minutes at 350°F.
