Notes
The most suitable olives are those from Gaeta (since the recipe is Neapolitan), but if you can’t find them, you can substitute with Greek olives or Taggiasca olives.
You can omit the chili pepper if you don’t like it. Alternatively, you can add an anchovy fillet in oil to the sauté.
You can use both small artichokes and large globe artichokes.
