Notes and Tips
If you want the bars to be firmer, you can let the dessert rest in the freezer. However, remember to transfer it to the refrigerator for a few minutes before serving.
You can use different types of dry cookies: in my case, I used 2.3 oz of cocoa cookies + 2.1 oz of digestive cookies.
If the ricotta you use is very creamy, let it drain from excess liquid first. You can replace it, if you prefer, with mascarpone or Philadelphia.
If you want to prepare a double batch, you can use a square pan measuring 8 inches per side.
