A tasty omelet with potatoes, diced cooked ham, and provola cheese, a very simple dish, great for using up leftover cold cuts and cheeses from the fridge and preparing dinner in a short time. Simply sauté the potatoes in the pan and mix them with the eggs and other ingredients… then you can cook the omelet in the oven (as I did) or the classic way on the stovetop. The omelet can also be served as an appetizer if you cut it into small squares and accompany it with cold cuts or vegetables. Try this recipe, it’s delicious and very easy!

Ingredients
- 4 eggs
- 3 potatoes
- 3.5 oz cooked ham (classic or smoked)
- 2.3 oz provola cheese (white or smoked)
- aromatic herbs (parsley, oregano or others)
- extra virgin olive oil
- salt
- pepper

- Cake pan 8 inches
- Parchment paper
- Bowl
- Frying pan

Preparation
Wash and peel the potatoes, cut them into chunks, and cook them in a frying pan with a dash of oil and a pinch of salt.
When tender, transfer them to a sheet of paper towels to dry from excess oil and let them cool.
Meanwhile, cut the cooked ham and provola into pieces.
Beat the eggs in a bowl, with a pinch of salt, pepper, and a handful of aromatic herbs to your liking. You can also add Parmesan if you like.
Add the potatoes, ham, and provola to the eggs (1).
Mix well, then transfer the mixture to a cake pan lined with slightly moistened parchment paper (2).
Put everything in a fan oven at 350-375°F and bake for about 20 minutes, or until the surface is dry and golden (adjust based on the oven and the height of the omelet).
The omelet with potatoes, ham, and provola is ready, let it cool for a few minutes then serve it sliced… enjoy your meal!
Tips and Notes
To lighten the recipe, you can boil the potatoes instead of cooking them in the pan.
Besides ham, you can use other cold cuts, even those left over in the fridge.
If you don’t want to turn on the oven, you can cook the omelet in a pan, with oil or butter, turning it on both sides.
