  • 2 tbsps soy sauce
  • 2 tbsps acacia honey
  • 3 tbsps extra virgin olive oil
  • 1 tsp tomato paste (to taste)
  • 2 tbsps lemon juice

Preparation

  • Wash the fennel, remove the green parts and outer leaves, then slice them into pieces just under half an inch thick.

  • In a small bowl, mix the soy sauce, oil, lemon juice, honey, and tomato paste (to taste).

  • Place the fennel slices in a large bowl, slightly salt them, and pour over the prepared sauce.

    Mix gently (to avoid breaking them), but thoroughly enough so they are well coated with the dressing.

  • Take a large baking pan and line it with parchment paper. Arrange the fennel in it (without overlapping), then lightly drizzle with the sauce left at the bottom of the bowl.

    Sprinkle with sesame seeds and herbs to taste (thyme, oregano, or others).

  • Put the pan in a fan oven at 375°F and bake for 20-25 minutes, or until the fennel is tender to your liking.

    At the end, add a handful of chopped parsley to taste.
