Ingredients

  • 1.1 lbs asparagus
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame seeds
  • extra virgin olive oil (or seed oil)
  • salt
  • herbs (to taste)

Preparation

  • Clean the asparagus by removing the tough end of the stalk.

    Wash them thoroughly to remove any sand or dirt.

  • Cut them into chunks and then halve them lengthwise. If using very thin asparagus or wild asparagus, you can simply cut them into 2-3 pieces.

  • Heat a wide pan (or a wok) with a drizzle of olive oil (or seed oil).

    Add the asparagus and sauté over high heat for a few minutes, stirring with a wooden spoon.

  • Add a pinch of salt and a splash of hot water. Lower the heat slightly and cook the asparagus until they are tender but still firm.

  • At the end of cooking, add the soy sauce and sesame seeds. Sauté for another minute or two, then turn off the heat.

  • The pan-fried asparagus with soy and sesame are ready, transfer them to a platter and serve hot or warm. If desired, you can add thyme, parsley, or other herbs for flavor.
