Pan-fried friggitelli with cherry tomatoes is a simple and tasty side dish, prepared in a few minutes and can also be served at room temperature. Ingredients
- 9 oz friggitelli
- 10 cherry tomatoes
- 1 clove garlic
- chili pepper (to taste)
- extra virgin olive oil
- salt
- basil

Preparation
Wash the friggitelli, remove the stem and seeds, but try to keep the peppers intact.
Wash the cherry tomatoes and cut them in half.
Heat a large pan with a drizzle of oil and brown the friggitelli, turning them 2-3 times until they are tender (1).
In a second pan, sauté the clove of garlic with oil and chili pepper. Add the cherry tomatoes, placing them cut side down (2). Salt them and cook for a few minutes, without turning them, just pressing them a little with a spoon.
Add the cherry tomatoes to the peppers, adjust the salt, and let them flavor over medium-low heat for 5-6 minutes (3).
At the end, add some leaves of basil, turn off the heat, and transfer everything to a serving dish.
The pan-fried friggitelli with cherry tomatoes are ready; you can serve them immediately or let them cool for about ten minutes.
Tips and Notes
Adjust the cooking times based on the size of the friggitelli and according to your tastes.
If fresh tomatoes are not available, you can use canned peeled cherry tomatoes.
