- 5.6 oz pasta
- 7 oz broccoli rabe (net weight)
- 1 clove garlic
- 3 fillets anchovies in oil
- 1 slice rustic bread
- chili pepper
- extra virgin olive oil

Preparation
After removing the tough and damaged leaves, wash the broccoli rabe thoroughly under running water.
Boil them in salted boiling water for 7-8 minutes, drain them (without discarding the water), and chop them roughly.
In a large pan, sauté the garlic with the anchovies and a pinch of chili pepper (1).
Add the broccoli rabe, adjust the salt, and let them cook for a few minutes over medium heat (2). If the bottom dries out too much, add a tablespoon of their cooking water.
Meanwhile, chop the bread with a mixer and toast it in a small pan with extra virgin olive oil (3). It will take a few minutes, stir the crumbs continuously to prevent burning, once golden, remove them immediately from the heat.
Boil the pasta in the broccoli rabe cooking water (if too little, add more). Drain it slightly al dente and add it to the sauce pan.
Stir over high heat for a minute or two, so the flavors blend.
Turn off the heat and serve the pasta on plates, adding the crispy bread on top.
