A recipe that is prepared in a few minutes and is excellent to serve for lunch or a rustic dinner. If you use fresh ingredients, you can prepare a larger quantity of sauce and freeze the portions to have them ready on occasion. Try this dish, it’s very easy but very appetizing!

Ingredients
- 6.35 oz pasta
- 5.3 oz king oyster mushrooms (or other fresh mushrooms)
- 1.76 oz smoked bacon
- 3.53 oz tomato pulp (or purée)
- 1 clove garlic
- parsley (or thyme)
- extra virgin olive oil
- salt

Preparation
Clean the mushrooms by removing any soil residues, then wipe them with a damp cloth or wash them quickly. Cut them into slices or pieces.
Cut the bacon into strips and fry it in a pan without adding oil. One or two minutes will suffice, then transfer it to a plate and remove the excess fat.
In the same pan, fry a clove of garlic in a drizzle of oil, add the mushrooms, season them with salt, and cook them for about ten minutes, or until they are tender. If necessary, moisten the bottom with a little water.
Add the browned bacon and the tomato pulp to the mushrooms. Stir and cook for a few minutes on low heat.
In the meantime, boil the pasta in salted boiling water for the required minutes.
Drain it and pour it into the pan with the sauce. Add a handful of chopped parsley and let it flavor for a few moments on medium heat.
The pasta with mushrooms and bacon is ready, distribute it on plates and serve it hot… enjoy your meal!
Tips and Variations
You can omit the garlic or replace it with chopped shallots.
You can use different types of cultivated fresh mushrooms (king oyster, champignon, beech…), or even add a few grams of dried porcini, soaked in water.
You can increase or decrease the amount of tomato to your liking.
