Ingredients
- 1 roll puff pastry (rectangular)
- 2 nectarines
- 1.76 oz amaretti cookies
- 1 tbsp peach jam
- 1 egg
- 1 tsp milk
- granulated sugar
- powdered sugar

Preparation
Wash the peaches and slice them, removing the pit.
You can peel them or leave the skin, as you prefer.
Unroll the puff pastry and brush the center with a layer of peach jam, or any jam you like.
Place the amaretti cookies (1) on top, then add the peaches (2). If the peaches are not very sweet, you can lightly sugar them.
Fold one side of the puff pastry, then cut strips on the other side with a cutter (3).
Seal the ends well, twist the strips and overlay them.
Transfer the strudel to a baking tray and brush the entire surface with the beaten egg mixed with milk (4). Finally, sprinkle with granulated sugar.
Place the peach strudel in a ventilated oven at 375°F and bake for about 30 minutes, or until the pastry is golden and dry on the bottom. Adjust time and mode according to your oven.
The peach and amaretti strudel is ready, let it cool for 30-40 minutes before serving, so it can be cut more easily.
If you like, you can sprinkle it with powdered sugar.
Tips and Notes
You can replace amaretti with other dry cookies or ladyfingers. Do not omit them, as they help absorb some of the liquid released by the fruit.
If you don’t have nectarines, you can use yellow peaches, peeled. Choose ripe but firm fruits.
For this recipe, I used sweet puff pastry (always found in the refrigerated section of supermarkets), but if you don’t have it, you can use the classic one, sugaring the surface more.

How do you store peach strudel?
I recommend consuming it on the same day, so that the puff pastry remains drier and more crumbly. But if you have leftovers, you can store it for one day in the refrigerator and reheat it for a few minutes if needed.
