A very simple recipe, quick to make but full of flavor… peas with eggs and bacon, cooked in a pan. If available, I used fresh peas, but out of season, frozen ones are also fine… just cook them with a little water, some onion, and a pinch of salt, then add the bacon and beaten eggs. In a few minutes, the dish will be ready, nutritious, and really delicious!

Ingredients
- 10.5 oz peas (fresh or frozen)
- 3 eggs
- 2.5 oz smoked bacon
- Half onion
- 1 tbsp Grana Padano cheese, grated (optional)
- parsley
- extra virgin olive oil
- salt
- pepper

Preparation
Clean the onion and chop it, put it in a pan with a drizzle of oil and sauté for a few moments.
Add the shelled peas, a pinch of salt, and a little hot water (or vegetable broth).
Cook them for about ten minutes, or until they are tender (1).
When the peas are cooked (and the water has evaporated), add the bacon cut into strips (2) and brown for a minute or two.
Break the eggs into a bowl, add salt, pepper, and the Grana Padano if desired. Beat with a whisk or two forks.
Pour the mixture into the pan with the peas and cook over medium heat for a few seconds, stirring continuously (3). As soon as the eggs are set, turn off the heat and add a handful of chopped parsley, if desired.
Peas with eggs and bacon are ready to be served at the table… enjoy your meal!
Tips and Notes
You can use either fresh or frozen peas, adjust the cooking time according to their size and quality.
If your bacon is very soft (mine was quite aged), brown it separately without oil before adding it to the peas. You can also replace it with speck or cooked ham.
I recommend not overcooking the eggs, otherwise the dish will be a bit dry.
