Notes and Tips
Since the main ingredient of the recipe, try to choose a high-quality pistachio cream, in this case, I used a cream with over 40% Sicilian pistachios.
Once prepared, the cookies should immediately go into the oven, otherwise they will lose some of their shape. If the oven is not already at temperature, place the tray in the fridge for the necessary minutes.
You can also fill the cookies with jam (for example, apricot) or with hazelnut cream.
