Notes and Variations
You can also make the rolls with veal, chicken, or turkey slices, as long as they are thinly sliced.
You can replace the champignons with other cultivated fresh mushrooms, such as pioppini, cardoncelli, or pleurotus, or you can add some dried porcini mushrooms for aroma.
