A seasonal main course, tasty and very quick to make… pork loin slices with grapes, tender and fragrant. The procedure is very simple, the cooking is the classic method for scallops, to which grape juice and grapes are added. Try this recipe, it’s really easy and ready in a few minutes!

Ingredients
- 10.58 oz pork loin (slices)
- 1 bunch white grapes (or pink)
- 1 tbsp flour
- butter
- extra virgin olive oil
- 1 sprig rosemary
- herbs (dried, to taste)
- salt
- pepper

- Potato masher
Preparation
Detach the grapes, wash and halve them, removing the seeds.
Place about half in the potato masher, and squeeze to extract the juice. Set the remaining aside.
Place the slices on a cutting board and pound if necessary. Dredge in flour mixed with pepper and a handful of herbs (thyme, sage, rosemary, chives, or others).
In a large pan, melt a small knob of butter with a drizzle of oil. Add the pork loin slices and brown them over high heat.
Pour in the grape juice, adjust the salt, and let cook for a couple of minutes.
Then add the grapes you didn’t squeeze and a chopped rosemary sprig.
Cook over medium heat, turning the meat a couple of times. It will only take a few minutes, adjust according to the thickness of the slices.
Pork loin slices with grapes are ready, serve them hot, drizzled with the cooking juices… enjoy your meal!
Tips and Variations
You can use white or pink grapes of different varieties.
You can flavor the flour with herbs of your choice: thyme, rosemary, sage, chives, parsley, etc. If you like, you can add a juniper berry.
Pork meat is the most suitable for this preparation, as it pairs best with the sweetness of grapes. If you don’t like it, you can replace it with veal slices.
