  • 2 cups tomato pulp
  • 2 cloves garlic
  • 3 tablespoons black olives (or taggiasca)
  • 1 pinch chili pepper
  • oregano (or other herbs to taste)
  • extra virgin olive oil
  • salt

Tools

  • Pan
  • Cutting board
  • Meat mallet

Preparation

  • Place the slices of pork neck on a cutting board and gently pound them to make their thickness even (about 3/8 inch or slightly less).

  • Heat a wide pan with a drizzle of extra virgin olive oil, add the meat and brown it for 5 minutes, seasoning with salt and turning it on both sides (1).

Remove it from the pan and keep it warm.

  • In the same pan, add the garlic, the tomato pulp, a pinch of salt and the chili pepper. Also add the olives and let the sauce reduce for 5–6 minutes (2).

  • Now place the slices of pork neck back into the sauce, lower the heat to the minimum and cook for about another 15 minutes, turning a couple of times (3).

At the end, remove the garlic and perfume with oregano, basil or other herbs to taste.

  • The pork neck in tomato sauce is ready, tender and flavorful. Serve it hot accompanied by slices of toasted bread, grilled polenta or a side of your choice.
