Notes and Variations
You can use pork stew meat usually found in supermarkets or butcher shops, or get a piece of loin, shoulder, or ham.
You can also make the recipe with veal.
I used cardoncelli mushrooms, but champignons, pioppini, mixed cultivated mushrooms with the addition of dried porcini if desired, are also fine.
You can lightly flour the meat before browning it.
