Potato and Onion Pie

A tasty potato and onion pie baked in the oven, very easy to make with just a few simple ingredients. It can be paired with all main courses, but it’s also excellent to accompany appetizers, alongside a platter of cold cuts and cheeses. You just need to grate the potatoes, salt them to lose some water, then bake them together with onions and the seasoning. For the recipe, I took inspiration from an idea by Natural Kitchen, which I only slightly adapted, try it yourself, in its simplicity it is truly delicious!

Ingredients

  • 1.1 lbs potatoes
  • 2 onions
  • herbs (thyme, oregano, rosemary…)
  • 1 pinch sweet paprika (to taste)
  • grated Parmesan (to taste)
  • extra virgin olive oil
  • salt
  • pepper

Tools

  • Baking tray
  • Parchment paper
  • Grater
  • Colander
  • Bowl

Preparation

  • Wash and peel the potatoes. Grate them with a large hole grater, place them in a colander and sprinkle with 2-3 pinches of salt.

    Let them rest for 10-15 minutes so they lose some water, then squeeze and dry them well with paper towels.

  • Transfer them to a bowl, add a pinch of pepper, a pinch of paprika (if you like), a handful of herbs to taste, and a drizzle of olive oil.

  • Mix well, then place the potatoes in a baking tray lined with parchment paper. You should form an even layer about 1-1.5 cm (1).

    Now clean the onions and cut them into not too thin rounds. Arrange them on the potatoes, then add a pinch of salt, pepper, and a drizzle of oil (2).

  • Place the tray in a fan oven at 356°F and bake for about 30 minutes.

    Remove the pie from the oven for a moment, sprinkle with some Parmesan, drizzle with a little more olive oil and return to the oven for another 15-20 minutes.

    If you want the surface to be more golden, place the tray on a higher shelf and turn on the grill in the final minutes.

  • The potato and onion pie is ready, great both hot and warm, as a rich side dish or to accompany an appetizer.

Tips and Variations

Cooking times and temperatures depend on your oven and the quality of potatoes used. The pie will be ready when the potatoes are tender and golden around the edges.

You can use either red or white onions. The addition of Parmesan is optional.

You can flavor with herbs or spices to taste. You can add a sprinkle of breadcrumbs on top.
