Ingredients
- 1 sheet puff pastry
- 8.8 oz potatoes
- 3.5 oz stracchino cheese
- extra virgin olive oil
- salt
- pepper
- aromatic herbs (to taste)

- Mandolin or slicer
Preparation
Wash and peel the potatoes, slice them into very thin slices using a mandolin or slicer. Soak them in a bowl of cold water for about an hour, so they lose some of their starch.
After the time has passed, drain and dry them on a towel.
Place them in another container and season with extra virgin olive oil, salt, and pepper.
In a small bowl, work the stracchino cheese with a fork to make it creamy.
Unroll the puff pastry and place it in the baking pan. Fold its edge and prick it all over.
Spread the base with stracchino (1), then cover with potato slices, trying not to overlap them too much (2). If desired, you can add a handful of aromatic herbs, such as rosemary, thyme, basil, sage, etc.
Place the savory pie in a fan oven at 356-365°F and bake for about 30 minutes, or until the potatoes are cooked and the pastry is golden.
The potato and stracchino puff pastry is ready, cut it into wedges and serve it hot or warm as a delightful appetizer!
Advice and notes
You can use round or rectangular puff pastry. You can use stracchino or crescenza cheese.
The potatoes must be sliced very thin, almost transparent, otherwise they won’t cook. If you slice them thicker, I recommend parboiling them in water for a few minutes before placing them on the pastry.
You can season with thyme, rosemary, oregano, marjoram, or other dried herbs. Or you can add fresh herbs after cooking.
