A tasty and simple side dish that suits all menus and is prepared in no time… potatoes and peppers in the air fryer, lighter than the classic ones cooked in a pan, but above all much faster to make. You will just need the time to cut and season the ingredients before putting them in the basket, starting with the potatoes and continuing with the peppers. I added a flavorful mix of garlic and parsley at the end of cooking, but if you don’t like garlic, you can skip this step. Try this recipe, it’s easy and delicious!

Ingredients

  • 10.5 oz potatoes
  • 2 peppers
  • 1 clove garlic
  • parsley
  • extra virgin olive oil
  • salt
  • pepper
  • herbs (dried, to taste)

Preparation

  • Wash and peel the potatoes. Cut them into wedges of uniform size and place them in a bowl.

    Season the potatoes with extra virgin olive oil, salt, pepper, and a handful of herbs to taste.

  • Clean the peppers, removing the stem, seeds, and internal filaments. Cut them into not too small pieces and place them in another bowl. Season them with a little oil and salt.

    Peel the garlic and finely chop it together with a sprig of parsley.

  • Pour the potatoes into the fryer basket (1). I advise not to use paper, so more air circulates, but if you want less mess, use a perforated sheet of paper.

    Turn on the fryer to 392°F and set it for 15 minutes of cooking.

  • When there are 7-8 minutes left, open the basket, add the peppers, and stir (2).

  • At the end of the time, check that the potatoes are tender and cooked inside; if not, continue for another 2-3 minutes, still at 392°F.

    Transfer the peppers and potatoes to a tray and sprinkle with the chopped garlic and parsley.

  • Your side dish of potatoes and peppers in air fryer is ready to be served along with all your main courses.

Tips and Notes

The cooking times depend on the model of air fryer used, and how the potatoes are cut. Check by inserting a fork or skewer.

If you do not like garlic, you can omit it or add garlic powder to the seasoning of potatoes and peppers.

You can flavor with spices to taste.

If you use new potatoes, you can leave the skin on.
