Ingredients
- 1 sheet puff pastry (rectangular)
- 4 oz broccoli (florets)
- 3.5 oz ricotta
- 1 oz speck (or cooked ham, as desired)
- 1 tbsp grated Grana Padano
- 6 walnuts
- 1 egg
- salt
- pepper

Preparation
Wash the broccoli florets and boil them in salted water for 6-7 minutes. Drain and let them cool slightly.
Transfer them to a bowl and mash with a fork (or blend them in a food processor if you prefer).
Add the ricotta, chopped speck, and grated Grana (1).
Mix well, season with salt and pepper. If the mixture is too moist, you can add a tablespoon of breadcrumbs.
Unroll the puff pastry and cut it into 12 squares.
Distribute the filling in the center of each square, and seal the pastry at the center by pressing the corners well (2).
Place the bundles on a baking sheet and top each with a half walnut (3). Finally, brush with the beaten egg.
Place the tray in a ventilated oven at 355-365°F and bake the bundles for about 25 minutes, or until golden.
