Notes, variants, and advice
If you use a round puff pastry sheet, cut out discs with a pastry cutter and then fold them into half-moons.
You can replace salted ricotta with another grating cheese, as long as it’s not too aged.
If the tomato sauce is a bit watery, thicken it for a few minutes in a saucepan over low heat.
