Ingredients

  • 1 roll puff pastry
  • 3.5 oz speck
  • 3.5 oz scamorza
  • 2 zucchini
  • breadcrumbs
  • extra virgin olive oil
  • salt

Tools

Preparation

  • Wash the zucchini, remove the ends, and slice them into very thin rounds (1-2 mm). Use a slicer or a mandoline to ensure even thickness.

  • Unroll the puff pastry and place it on a baking tray with its parchment paper.

    Create a small edge along the sides and prick it with a fork.

  • Spread the speck slices (1) all over the surface, then add the scamorza, also sliced thinly (2).

  • Now cover with the zucchini rounds, slightly overlapping them. Sprinkle with a pinch of salt, a drizzle of olive oil, and a little breadcrumbs (3).

  • Place the savory pie in a fan oven at 350-365°F and bake for about 25 minutes, until the pastry is dry and golden. Adjust the time according to your oven.

  • The puff pastry cake with zucchini and speck is ready, cut it into squares and serve hot or warm… enjoy your meal!

Tips and Notes

Together with the breadcrumbs, you can also add some grated Parmesan cheese on top.

You can use smoked scamorza or provola.

You can replace speck with cooked ham (smoked or classic).
