If you have a roll of puff pastry in the fridge and don’t know how to use it, here’s an easy, quick, and tasty idea, perfect as an appetizer or to solve dinner. Just add eggplants, ham, and cubes of provola… in a few minutes, you’ll have a delicious and flavorful savory pie. In this case, I baked the eggplant slices in the oven (since I had to turn it on anyway), with a little oil and salt, but if you prefer, you can also grill them. Ingredients
- 1 roll puff pastry
- 1 eggplant
- 3.5 oz cooked ham
- 1.4 oz provola cheese
- extra virgin olive oil
- salt
- herbs (to taste)

Preparation
Wash the eggplant, remove the ends and cut it into slices 1/4 inch thick.
Place them on the baking sheet (or a large tray), lined with parchment paper, overlapping as little as possible.
Lightly salt them and brush them with a little oil (1). Place them in a ventilated oven at 350°F and bake for about 10 minutes until they are tender enough.
Unroll the puff pastry and place it in the cake pan. Prick the bottom and fold it along the edges.
Layer the eggplant slices on top, alternating with slices of ham. Drizzle a light strand of oil and season to taste with dried herbs (2).
Place the savory pie in a ventilated oven at 350-375°F and bake for 20 minutes, then add the provola cheese, cut into cubes, on top.
Continue baking for another 5-7 minutes until the puff pastry is dry and golden.
