A simple and delicious appetizer idea, also great for accompanying aperitifs, buffets, or birthday parties… Puff pastry sandwiches with smoked salmon, creamy cheese, and lettuce, prepared in a few minutes, they are very appetizing and look good on the table. Just cut the puff pastry, bake it, open it, and fill it… you can customize the filling with many different ingredients, depending on the menu you want to propose. Try this recipe, it is really tasty!

Ingredients
- 1 sheet puff pastry (rectangular)
- 7.05 oz smoked salmon
- 3.53 oz creamy spreadable cheese
- lettuce
- 1 egg
- poppy seeds (to taste)

Preparation
Open the puff pastry and divide it into 16 rectangles (or 12 if you want bigger sandwiches).
Place it on the baking sheet (or a large tray) with its parchment paper.
Brush the surface with the beaten egg and sprinkle with poppy or sesame seeds as desired (1).
Bake in a fan oven at 356°F and cook for 12-13 minutes, or until the puff pastry is golden but not too dry.
Once done, remove from the oven and let cool for 10-15 minutes.
Using the tip of a knife, open the puff pastry rectangles in half (just make a lateral incision and they will open).
Fill them with a leaf of lettuce (washed and well-dried), one or two teaspoons of creamy cheese, and a slice of smoked salmon (2).
The puff pastry sandwiches with salmon are ready, place them on a tray and serve immediately so the puff pastry remains crunchy and dry.
Tips and Notes
You can cut the puff pastry into the shape you prefer, depending on the occasion in which you want to serve the sandwiches.
You can substitute the salmon with chosen deli meats, or with grilled vegetables for a vegetarian version.
You can use cream cheese, robiola, ricotta, or another fresh cheese of your choice.
If you want to omit the egg, you can brush with milk, melted butter, or leave the surface as it is.
