Ingredients
- 1 sheet puff pastry
- 10.5 oz champignon mushrooms
- 1/2 cup ricotta
- 2 oz cooked ham
- 1 egg (large)
- sesame seeds (or mixed, to taste)
- extra virgin olive oil
- salt
- pepper

Preparation
Clean the mushrooms by removing all the dirt, quickly wash them, and slice them.
Heat a pan with a drizzle of oil, add the mushrooms (1), salt them, and cook for a few minutes until they are tender and have released their water. Transfer them to a plate and let them cool.
Cut the ham into small cubes or strips.
Break the egg into a small bowl, beat it with a fork, and add it to the ricotta, keeping aside about a tablespoon (you’ll need it later).
Salt, pepper, and mix until you get a cream (2).
Open the puff pastry and place it in the pie pan (with the parchment paper provided). Prick the base and fill with the mushrooms, diced ham, and ricotta cream.
Fold the edge of the pastry inward, then brush it with the reserved egg. Finally, sprinkle with sesame, poppy, or mixed seeds (3).
Place the savory tart in a fan oven at 356-374°F and bake for 25-30 minutes or until the pastry is golden and dry at the base. Adjust the time and temperature according to your oven.
