Puff pastry tongues, a great appetizer idea, easy and tasty, perfect for all occasions. All you need is a roll of puff pastry and a few other ingredients to make different fillings… a few minutes of baking and you’ll be ready to serve them at the table! In my case, I chose 4 vegetarian fillings, with cherry tomatoes, onions, zucchini, and mushrooms… but you can customize with different vegetables or add cold cuts or crumbled sausage. Ingredients
- 1 roll puff pastry (rectangular)
- 1.75 oz provola cheese
- 5 cherry tomatoes
- 1 zucchini (small)
- Half onion
- 3.5 oz champignon mushrooms (already cooked in a pan)
- herbs (to taste)
- extra virgin olive oil
- salt
- pepper

Preparation
Wash the cherry tomatoes and cut them into pieces.
Wash and trim the zucchini, cut it into thin slices, with a knife or a mandoline.
Peel the onion and cut it into rings.
Cut the provola into small cubes.
Open the puff pastry on the work surface, divide it into 4 strips and prick it with a fork (1).
Place the cherry tomatoes on the first strip, the zucchini on the second, the onions on the third, and the mushrooms (previously cooked in a pan) on the fourth.
Season the tomatoes, zucchini, and onion with salt, pepper, a little extra virgin oil, and a handful of herbs to taste.
Finally, distribute the provola cubes on all 4 strips (2).
Transfer everything onto a baking tray and bake in a fan oven at 375°F for 18-20 minutes, or until the pastry is dry and golden (3).

Tips and Notes
If you don’t have cooked mushrooms, clean 150 g of fresh mushrooms, slice them, and cook them in a pan with oil and salt for about ten minutes.
You can use provola, smoked scamorza, or pizza mozzarella.
You can use cherry or grape tomatoes, red or yellow.
You can use either red or white onion.

Sure, you can use different vegetables, depending on the season, like bell peppers, grilled eggplant, or artichokes in oil.
You can also add some cold cuts, in slices or cubes.
