Ingredients
- 1 sheet puff pastry (rectangular)
- as needed hazelnut cream
- 1 egg (for brushing)
- powdered sugar
Tools
- Baking tray
- Pastry cutter
- Bowl
- Brush
Preparation
Unroll the puff pastry on your work surface and divide it into small squares of about 2.5 inches on each side, using a pastry cutter or knife (1).
Spread a scant teaspoon of hazelnut cream on each square.
Fold them into triangles, pressing well along the edges. Form tortellini by wrapping the pastry around your finger, as you would with classic egg pasta (2).
Place the tortellini on a baking tray lined with parchment paper. Brush them with a beaten egg, or with milk (3). Optionally, sprinkle with some sugar granules.
Place the tray in a fan oven at 375°F and bake for about 15 minutes or until golden. Adjust the temperature and times according to your oven.
Puff pastry tortellini with hazelnut cream are ready, let them cool for a few minutes, then dust with powdered sugar.
Advice and Notes
You can use any type of hazelnut or chocolate cream you prefer.
If you want to use jam instead, I recommend mixing it with finely crushed cookies to prevent it from oozing out during baking.
Try to use cold puff pastry from the refrigerator, otherwise, it will become sticky and more difficult to shape into tortellini.
You can brush with egg, milk, or skip this step altogether.
You can also make savory tortellini by filling them with a ham or mortadella mousse.
