Puff pastry with mushrooms and caramelized onions… a very simple savory pie, quick to make but really tasty. Great to offer as an appetizer, or to serve at a buffet or rustic dinner, it is prepared in a few minutes, is flavorful and appetizing. For practicality and to facilitate cooking, I divided the pastry in two, but if you prefer, you can use it whole. Try this recipe!

Ingredients
- 1 sheet puff pastry (rectangular)
- 3.5 oz onions (net weight)
- 10.5 oz mushrooms (fresh, cultivated)
- 1.4 oz provola
- parsley
- 2 tbsps white wine vinegar (or red)
- 1 tbsp brown sugar
- extra virgin olive oil
- salt

Preparation
Clean the mushrooms by removing the dirty end with soil. Wipe them with a damp cloth, or wash them quickly.
Cut them into slices, place them in a pan with a drizzle of oil and a pinch of salt, and cook them on high heat for a few minutes. When ready, turn off the heat and add a handful of chopped parsley.
After cleaning, cut the onions into rings or thin wedges. Put them in another pan with a drizzle of oil, a splash of water, and a pinch of salt.
Let them soften on low heat, then add the sugar mixed with the vinegar.
Continue cooking for another 8-10 minutes until the onions are slightly caramelized.
Now take your pastry and divide it into two parts. Fold the obtained rectangles along the edges and pierce in the center (1).
Fill the pastries with mushrooms and onions, then place them on a baking tray lined with parchment paper (2).
Put in a fan oven at 350-375°F and bake for 15-20 minutes.
After the time has passed, add provola cut into cubes on top and continue baking for another 5-10 minutes. The cheese should melt, and the pastry should be golden (3).
The puff pastry with mushrooms and caramelized onions is ready, great as an appetizer or to accompany a rustic buffet!
Tips and Variations
You can also make a large puff pastry (rectangular or round), without dividing the dough.
You can use white, red, or yellow onions. Do not slice them too thinly, or they won’t remain soft.
You can use different varieties of mushrooms: champignons, pioppini, pleurotus, or mixed.
