Ingredients

  • 10.6 oz pumpkin (net of waste)
  • 1/2 cup milk
  • 8.8 oz mascarpone
  • 1/2 cup heavy whipping cream
  • 2/3 cup vanilla powdered sugar
  • 5 oz ladyfingers
  • 1 cup coffee
  • unsweetened cocoa powder

Preparation

  • After removing the skin and seeds, cut the pumpkin into cubes and place it in a non-stick pan.

    Pour the milk and cook the pumpkin on low heat until tender (1). If the liquid dries up too much and the pumpkin tends to stick, add more milk.

  • At the end, blend everything with a mixer until you get a smooth puree without lumps. Transfer to a container and let cool well.

    In a large bowl, mix the mascarpone with the powdered sugar and pumpkin puree.

  • Using a mixer, whip the cream until it becomes fluffy and firm. Add it to the mascarpone cream using upward motions.

  • Prepare a generous cup of espresso coffee and pour it into a shallow dish to cool. If desired, you can add a teaspoon of sugar.

    Dip the ladyfingers in the coffee, without soaking them excessively. Place them on the bottom of a baking dish (2) and sprinkle them with a little cocoa.

  • Cover with the mascarpone and pumpkin cream and level it (3). Create a second layer of coffee-soaked ladyfingers, cocoa, and cream, until the ingredients are used up.

  • Cover the dessert with plastic wrap and let it rest in the refrigerator for at least a couple of hours.

    Before serving, sprinkle with plenty of unsweetened cocoa powder.
