Oven-baked radicchio, an easy and tasty side dish I make quite often, especially when I have radicchio heads to use up quickly. The recipe I’m sharing today is really simple and quick: season the chopped radicchio with oil, salt, pepper, breadcrumbs, Parmesan, and herbs, and put everything in the oven! In a few minutes (without messing up the kitchen) you will have a flavorful and light side dish that pairs well with any main course. Try the quick baked radicchio yourself!

Ingredients
- 1 head radicchio (early or late)
- breadcrumbs
- grated Parmesan cheese
- herbs (thyme, parsley, rosemary, or others to taste)
- extra virgin olive oil
- salt
- pepper
Tools

- Parchment paper
- Knife
- Paper towels
Preparation
Clean the radicchio by removing a couple of outer leaves if they are damaged or too hard.
Cut the head into 4 or 6 wedges (depending on size) and wash it under cold running water, without detaching the leaves from the base.
Dry each wedge well with kitchen paper towels.
Arrange the radicchio in a baking tray lined with parchment paper.
Add a pinch of salt, pepper, and a handful of dried herbs of your choice on top.
Sprinkle with breadcrumbs and grated Parmesan, finally drizzle with a bit of extra virgin olive oil.
Place in a ventilated oven at 375°F and bake for about 15 minutes, or until the radicchio is gratinated and crispy to your liking. Adjust the time and temperature based on your oven’s power.
The quick and simple baked radicchio is ready, transfer it to a serving tray and serve immediately!
Tips and Notes
You can use Treviso radicchio (the one I used), or late, Verona, or Chioggia radicchio.
You can omit the cheese if you don’t like it. Instead of breadcrumbs, you can grind stale bread (white or whole grain) or sandwich bread in a mixer.
You can flavor with various dried herbs: thyme, marjoram, oregano, rosemary, parsley, mint, etc.
