Ingredients
- 2 cups all-purpose flour
- 1 cup water
- 1 tbsp vegetable oil (or extra virgin olive oil)
- 2 tsp instant yeast for savory preparations
- 1 tsp salt
- olives (green or taggiasca)
- oregano
- extra virgin olive oil (for the surface)
- Maldon salt (to taste, for the surface)
Tools
- Pan parchment paper 8 inches
- Bowl or stand mixer
- Air Fryer
Preparation
Pour into a bowl (or the stand mixer) the water, oil, and salt. Mix for a few seconds.
Gradually add the flour and instant yeast. Mix together with a spoon (or with the paddle attachment if using the stand mixer).
You will obtain a very soft and sticky dough.
Pour the dough into a paper mold (no need to grease, as it is non-stick).
Now add the olives on the surface, slightly pressing them in, the oregano, some salt flakes, and a drizzle of extra virgin olive oil (1).
Preheat the air fryer for 2-3 minutes, then place the focaccia in the basket and cook it at 392°F for 22-25 minutes.
It should be golden and dry inside (2).
At the end, remove the focaccia from the basket and let it cool for a few minutes.

Tips and Notes
You can also use flour type 0 or type 1.
Adjust the time and temperature according to your air fryer model.
Use a paper mold, a classic metal mold would not cook the focaccia base well.
