Quick gratinated tomatoes to prepare and cook, thanks to the air fryer… an extremely easy recipe to make a classic summer side dish without turning on the oven (and heating the room). In just a few minutes, your tomatoes will be tender and crispy on the surface, excellent both hot and at room temperature. You can use different varieties of tomatoes and season them with the herbs you prefer… if you want to prepare more, you will simply need to cook them in batches unless you have a very large fryer. Ingredients

  • 9 oz piccadilly tomatoes (or other variety)
  • 1.25 oz rustic bread
  • 1 clove garlic
  • 1 tbsp capers
  • herbs (parsley, oregano, basil, or others)
  • extra virgin olive oil
  • salt

Tools

  • Air fryer
  • Baking tray
  • Food processor
  • Strainer

Preparation

  • Wash the tomatoes, cut them in half, and remove the seeds. Lightly salt them, place them in a strainer, and let them drain for about ten minutes.

  • In the meantime, place the broken bread, a clove of garlic, the capers (rinsed and squeezed), and the herbs into a small mixer.

    Chop for a few seconds, then transfer the mixture to a bowl and add a light drizzle of oil.

  • Take a tray sized to fit the fryer basket and line it with parchment paper.

    Place the tomatoes (1) and fill them with the seasoned bread (2). Drizzle with another bit of oil, trim the excess paper, and place the tray in the basket. If you prefer, you can also place the tomatoes directly in the basket with a sheet of fryer-specific parchment paper underneath.

  • Set the fryer to 392°F and cook for about 8 minutes. Cooking time depends on the size of the tomatoes and your model of air fryer (I used this one). Open the basket to check cooking and adjust the time as needed.

  • The quick gratinated tomatoes are ready to serve, excellent both hot and at room temperature.

Tips and Variations

You can use various types of tomatoes: piccadilly, cherry, grape tomatoes, or larger tomatoes cut into slices.

You can use rustic bread, sandwich bread, breadcrumbs, or ground dry bread.

For aroma, you can use the herbs you have available: parsley, basil, thyme, oregano, or others. If desired, you can add grated parmesan.
