Ingredients

  • 1 roll puff pastry (rectangular)
  • 3.5 oz ricotta (or spreadable cheese)
  • 5 sun-dried tomatoes
  • 1 tbsp taggiasca olives (or black, pitted)
  • 1/2 tbsp breadcrumbs
  • Grana Padano, grated
  • 1 egg
  • oregano
  • poppy seeds (or other seeds of choice)

Preparation

  • Finely chop the sun-dried tomatoes and olives, using a knife or a food processor. If using products in oil, first dry them well of excess oil with kitchen paper.

  • Place the mixture in a bowl, add the ricotta and breadcrumbs and mix. If necessary, add a pinch of salt, but it should not be needed.

    Unroll the puff pastry and spread the mixture over half of it (1).

  • Fold over the other half, pressing gently. With the pastry wheel, cut squares of equal size, without separating them from each other (2), so they do not “open” during baking. I made 35, but you can make them a bit larger, or rectangular.

  • Brush the surface with the beaten egg, then sprinkle with grated grana, oregano, and poppy seeds (3).

    Transfer everything onto a baking tray and place in a fan oven at 355-365°F. Bake for 20-25 minutes, or until golden brown (4).

  • Once done, remove from oven and separate the savory snacks, going over the cuts with the pastry wheel or a knife.

Tips and Notes

You can use ricotta or creamy cheese like Philadelphia.

The breadcrumbs help absorb any excess liquid, feel free to replace them with more grana.
