Notes and variations
You can enrich the dressing with capers, anchovy fillets, chili pepper, or other aromatic herbs like thyme or oregano.
You can omit the vinegar if you don’t like it.
If you don’t have an air fryer, you can roast the peppers in the oven (375°F for about 30-35 minutes) or on a non-stick grill pan (about 40 minutes, turning them frequently). At the end, you must always close them in a bag to peel them easily.
