A holiday appetizer idea, very quick to make, with smoked salmon that cannot be missing this season… salmon crostini with red currants and cream cheese, prepared in just a few minutes and perfect for both Christmas Eve and New Year’s. I made them with lightly toasted dark bread slices, smoked salmon slices, Philadelphia-style cheese, and currant berries, which add color and a nice flavor contrast with the other ingredients. Try this recipe, you’ll make a good impression at the table spending very little time!

Ingredients
- 6 slices dark bread (rye, wholemeal or other as desired)
- 5 oz smoked salmon
- 3.5 oz fresh spreadable cheese
- to taste red currants
- aromatic herbs (as desired)
- extra virgin olive oil

- Non-stick Griddle or toaster
Preparation
Put the spreadable cheese in a small bowl, add a drizzle of olive oil and a handful of herbs to taste: chives, oregano, parsley, dill, or others.
Mix well until you get a smooth cream.
Gently wash a few sprigs of currants and dry them on a paper towel.
Toast the slices of bread on a non-stick griddle or in the toaster. They should not become burnt, just slightly crispy on the surface. If you prefer, you can cut the bread with Christmas-themed shapes, like trees or stars.
Spread the bread slices with the creamy cheese, then add the smoked salmon and the red currants. If desired, you can scent with some mint or thyme leaves.
The salmon crostini with currants and cream cheese are ready, arrange them on a tray and serve as an appetizer.
Tips and Variations
You can use the type of bread you prefer, I used mixed seed rye bread, but wholemeal, multigrain, or even white bread if you prefer, is fine.
You can use Philadelphia, robiola, ricotta, or another creamy fresh cheese of your choice, even lactose-free or plant-based.
Given the simplicity of the recipe, choose a good quality smoked salmon. The one you see in the photo is enriched with poppy seeds and cut a bit thick, but the classic thin slices without aromas are fine.
