A delicious and very quick appetizer idea, perfect for Christmas holidays, but great all year round. Salmon stuffed crackers, simple Ritz-type crackers filled with a tasty smoked salmon mousse, garnished with sesame and poppy seeds… delightful finger foods ready in minutes, but they will be snapped up! The recipe is very easy and can be customized as you like, at the bottom of the page you will find my suggestions to adapt it to your menu. Ingredients
- 40 crackers (like Ritz or Tuc)
- 5.3 oz smoked salmon
- 5.6 oz cream cheese (or ricotta)
- herbs (dill, chives or others)
- lemon zest (to taste)
- sesame seeds
- poppy seeds
Tools

- Tray
- Cutting Board
Preparation
With a knife, finely chop the smoked salmon, put it in a bowl, and add the cream cheese. If you prefer, you can also chop the salmon in a mixer.
Add a handful of herbs to taste, fresh or dried, and the grated zest of half a lemon. Mix until you get a creamy and dense mixture (1).
In another bowl, pour a couple of tablespoons of sesame seeds and a couple of tablespoons of poppy seeds (1).
Spread a thick layer of salmon cream on half of the crackers, overlap the remaining crackers (without pressing), to create a sort of sandwich. Smooth and clean the edges with a small knife.
Now roll the filled crackers in the seed mix, making them stick along the entire edge (2). You can perform this operation with all the crackers, or leave some without seeds, as I did.
Your salmon stuffed crackers are ready, arrange them on a tray and serve as a delightful appetizer!
Tips and Variations
You can prepare the salmon mousse in advance and store it in the refrigerator. However, I recommend stuffing the crackers at the last moment, otherwise, they will lose their crunchiness.
You can replace the seeds with chopped chives or other herbs or spices.
You can fill the crackers with mousse made of mortadella, tuna, or cooked ham… just substitute the chosen ingredient for the smoked salmon.
You can use Philadelphia, robiola, or ricotta cheese.
You can make the recipe with other types of crackers, even square or rectangular ones.
