Tips and Variations
With the same procedure, you can use other types of mushrooms: champignons, pioppini, pleurotus, or mixed mushrooms.
You can enhance the flavor with a few grams of dried porcini mushrooms, soaked in warm water.
You can add thyme leaves or other aromatic herbs. The chili pepper is optional.
If you love garlic, you can finely chop it instead of leaving the cloves whole.
Sautéed cardoncelli can be stored for a couple of days in the refrigerator, in a tightly closed container. If you want to freeze them, do not add parsley, add it fresh before using.
