  • 1 clove garlic
  • 2 fillets anchovies in oil
  • 2 tablespoons Taggiasca olives
  • chili pepper (to taste)

Preparation

  • Clean the endive, wash it and remove the excess water using a salad spinner or a towel. Cut it into pieces.

  • Pour some oil into a pan, add the anchovies, the garlic (remove the inner germ), and a pinch of chili pepper to taste (1).

    Sauté and stir for a few moments until the anchovies dissolve in the oil.

  • Add the curly endive (2), lightly salt it and let it cook for a few minutes, just enough for it to soften.

    Finally, add the olives, stir, and let it flavor for another 2-3 minutes (3).

You can use either curly or regular endive. Alternatively, Belgian endive works well too.
