You can boil the snow peas for a few more minutes if you prefer them more tender.
You can use canned tomatoes if you don’t have fresh ones. Or, if you prefer, you can omit the tomato sauce and just use cherry tomatoes.
You can add a handful of capers and other herbs like parsley or oregano. You can use a chopped scallion instead of garlic.
