Ingredients

  • 1 roll puff pastry
  • 1 broccoli
  • 1.75 oz speck
  • 1.75 oz provola
  • extra virgin olive oil
  • salt
  • pepper
  • breadcrumbs

Tools

  • Baking Pan 11 inch
  • Pot
  • Colander
  • Cutting Board

Preparation

  • Clean the broccoli by separating the florets, and wash them under running water.

Boil the florets in boiling water (slightly salted) for 5-7 minutes until they are tender but still firm. Drain and let them cool, then season with a drizzle of oil, salt, and pepper.

  • Cut the speck and provola into small cubes.

Unroll the puff pastry and place it in the baking pan. Fold the edges and prick the center.

  • Sprinkle the pastry with a light layer of breadcrumbs, which will help absorb excess moisture from the broccoli.

Fill the puff pastry with the broccoli florets and speck cubes.

  • Place the savory pie in a fan oven at 365-375°F and bake for about 20 minutes.

Briefly open the oven, add the provola, and continue baking for another 5-6 minutes, until the cheese has melted and the pastry is golden.

  • The savory pie with broccoli and speck is ready, let it cool for a few minutes before serving… enjoy your meal!

Tips and Variations

You can use either round or rectangular puff pastry or shortcrust pastry.

You can replace the broccoli with cauliflower or Romanesco florets.

You can replace the speck with smoked bacon or cooked ham.

You can add the provola before baking… I prefer to add it later to avoid it getting too dry.
