Ingredients

  • 1 roll puff pastry (rectangular)
  • 2.82 oz mortadella (sliced)
  • 1.76 oz cream cheese
  • Half tbsp pistachio pesto
  • 1 egg
  • chopped pistachios

Preparation

  • Open the puff pastry roll on the work surface and divide it into two parts, without cutting it.

    Prick one half with a fork.

  • Spread the cream cheese on the pricked half. You can use Philadelphia, robiola, mascarpone, or ricotta, to taste.

  • Place the slices of mortadella on top of the cheese, leaving a thin border all around.

    Now add the pistachio pesto, trying to distribute it evenly.

  • Close with the other half of the pastry and seal the edges well by pressing with your fingers.

    With a knife, make light cuts on the surface. Brush your pie with beaten egg and sprinkle with about a tablespoon of chopped pistachios.

  • Place the pie in a baking tray (with its parchment paper underneath) and put it in a ventilated oven at 365°F for 20-25 minutes, or until golden brown.

Notes and Variations

For 6-8 people, use 2 rolls of pastry (one as a base, the other as a cover) and double the other amounts.
