Ingredients
- 1 roll puff pastry (rectangular)
- 2.82 oz mortadella (sliced)
- 1.76 oz cream cheese
- Half tbsp pistachio pesto
- 1 egg
- chopped pistachios

Preparation
Open the puff pastry roll on the work surface and divide it into two parts, without cutting it.
Prick one half with a fork.
Spread the cream cheese on the pricked half. You can use Philadelphia, robiola, mascarpone, or ricotta, to taste.
Place the slices of mortadella on top of the cheese, leaving a thin border all around.
Now add the pistachio pesto, trying to distribute it evenly.
Close with the other half of the pastry and seal the edges well by pressing with your fingers.
With a knife, make light cuts on the surface. Brush your pie with beaten egg and sprinkle with about a tablespoon of chopped pistachios.
Place the pie in a baking tray (with its parchment paper underneath) and put it in a ventilated oven at 365°F for 20-25 minutes, or until golden brown.
Your savory pie with mortadella and pistachios is ready, serve it cut into squares as a tasty appetizer!
Notes and Variations
For 6-8 people, use 2 rolls of pastry (one as a base, the other as a cover) and double the other amounts.
You can substitute the cream cheese with provolone or scamorza, cut into thin slices.
For the topping, salted pistachios are also fine.
If you don’t want to use the egg, you can brush with milk or melted butter.
