Ingredients

  • 1 sheet puff pastry
  • 10.58 oz mushrooms (fresh cultivated)
  • 1.76 oz smoked bacon
  • 1 egg (large)
  • cup cooking cream
  • parsley
  • extra virgin olive oil

Preparation

  • Clean the mushrooms by removing the end part and all soil residues. Wipe them with a damp cloth or rinse them quickly.

    Slice or chop them, then cook them in a pan with a drizzle of oil and a pinch of salt (1). It will only take a few minutes, over medium-high heat.

  • Let them cool, in the meantime cut the bacon into strips or cubes. You can brown it in a pan without oil if you want to make it less fatty, the one I used was already quite lean and there was no need.

  • In a bowl, beat the egg with the cream, a pinch of pepper, and a handful of chopped parsley.

  • Unroll the puff pastry and place it in the cake pan, folding it along the edges. Prick it with a fork, then add the mushrooms and bacon (2).

    Finally, pour the egg mixture and let it spread over the entire surface (3).

  • Put the savory pie in the fan oven at 356°F and bake it for about 30 minutes, or until the pastry is dry and golden.

Tips and Variations

You can use different types of fresh mushrooms, even mixing them: champignon, cardoncelli, pioppini, pleurotus. If you like, you can add some dried porcini for fragrance.
