Ingredients
- 1 roll puff pastry
- 1 3/4 cups potatoes
- 10 1/2 oz champignon mushrooms
- 2 1/2 oz scamorza
- breadcrumbs
- extra virgin olive oil
- salt
- herbs (to taste)

Preparation
Wash and peel the potatoes, cut them into chunks.
Sauté them in a pan, with a drizzle of extra virgin oil and a pinch of salt, until they are tender but golden on the surface (1).
When they are ready, transfer them to a paper towel to remove the excess oil.
Clean the mushrooms by removing all the dirt. Wash them with a damp cloth (or quickly under the tap) and slice them.
Cook them in another pan (2), with a drizzle of oil, a pinch of salt, and a handful of herbs to taste (marjoram, thyme, oregano, or others). When they are tender and have dried from their water, turn off and let cool.
Unroll the puff pastry and place it in the baking pan. Fold it along the edges, and prick it with a fork. Sprinkle the bottom with a little breadcrumbs, it will help absorb excess moisture.
Now fill the puff pastry base with potatoes and mushrooms (3).
Bake in a fan-assisted oven at 375°F for about 20 minutes.
After the time has passed, slightly open the oven and add the scamorza cut into cubes.
Continue cooking for another 7-10 minutes, until the pastry is golden and the cheese has melted.
