Savory zucchini croissants, with creamy cheese and puff pastry… they are quickly prepared with few ingredients, and are perfect as an appetizer or to serve with an aperitif. The zucchini are sliced thinly and grilled, then you just need to divide the puff pastry, add the cheese, and create the mini croissants. A very easy vegetarian recipe, but really very appetizing!

Ingredients
- 1 sheet puff pastry
- 3 zucchini
- 1.8 oz cream cheese (with herbs, or plain)
- 1 egg
- sesame seeds (to taste)
- salt

- Mandoline or slicer
Preparation
Wash the zucchini and cut them into thin slices (about 1/8 inch) lengthwise. I recommend using a mandoline or slicer, so they are all the same.
Grill the zucchini on a non-stick grill pan, adding a pinch of salt. A few minutes of cooking will suffice just to soften them a bit (and allow them to roll up better).
Open the puff pastry on the work surface and divide it into 12 triangles (1).
Spread each triangle with about half a teaspoon of cream cheese. I used herb-flavored Philadelphia, but plain is fine too, or ricotta.
Place two slices of zucchini on each triangle, letting them slightly overhang the edges (2).
Roll up the pastry starting from the long side to form small croissants. Place them on a baking sheet lined with parchment paper, brush them with the beaten egg, and sprinkle with sesame or poppy seeds as desired (3).
Place the croissants in a fan oven at 375°F and bake for 20-25 minutes, or until the pastry is puffed and golden.
The savory zucchini croissants are ready, perfect for aperitif!
Advice and Notes
If you do not want to grill the zucchini, you can use them raw, but slice them thinner (otherwise they will break while rolling the pastry).
You can add slices of cooked ham or speck.
You can replace the puff pastry with shortcrust pastry.
