Notes, Tips, and Variations
If you need to cook for 4 people, double the amount of meat and increase the cooking time to 4 hours.
If you can’t find whole chicken thighs like mine, drumsticks or chicken leg quarters will work fine.
You can season with your preferred herbs and spices: sage, rosemary, thyme, marjoram, paprika, roast mix, etc. You can omit the onion or replace it with a couple of garlic cloves.
Potatoes are optional. I use them to keep the meat slightly elevated from the bottom of the pot and the liquids released.
I used this slow cooker model. If you have this type of pot, you won’t need to brown the meat in a separate pan.
