An easy, quick, and very tasty recipe, perfect both as a rich side dish and as a vegetarian main. Smashed potatoes with feta, olives, and onion, a flavorful variation of simple Herb Smashed Potatoes I suggested some time ago. For this preparation, you need to leave the skin on, so you’ll need baby potatoes, then you just need to boil them, smash them, bake them, and add the other ingredients. In a few minutes, you’ll have a really delicious dish, perfect for summer!

Ingredients
- 14 oz baby potatoes
- 3.5 oz feta
- 2 tbsps Taggiasca olives (or black olives)
- Half red Tropea onion (or a scallion)
- mint (or basil)
- extra virgin olive oil
- salt
- pepper

- Colander

Preparation
Wash the potatoes well, removing all dirt residues. Boil them in boiling water for 20-30 minutes, or until they’re tender. Cooking times depend on their size.
Drain them and rinse under cold water to stop cooking.
Place them on a baking sheet lined with parchment paper, spacing them well apart.
Smash the potatoes using the bottom of a small bowl or glass, as shown in the photo.
Season them on top with oil, salt, and pepper.
Put them in a hot oven at 392°F, or under the grill setting. Leave them for about 10 minutes, or until the skin becomes a bit crispy.
Remove them from the oven, add the crumbled feta, olives, 4-5 leaves of mint (or other herbs), and a few slices of onion.
The smashed potatoes with feta and olives are ready to be served… enjoy your meal!
Tips and Notes
You can add the feta before putting the potatoes in the oven if you prefer it slightly gratinated.
You can omit the onion if you don’t like it.
Instead of boiling, you can steam the potatoes or cook them in the microwave. If possible, choose them of homogeneous size so they will cook in the same amount of time.
