Tips and Variations

If you don’t have the suitable molds, you can make traditional muffins with the same quantities. Even if the molds are silicone, I recommend greasing them anyway to ensure the donuts come out well.

You can add the liqueur of your choice (anise, Strega, limoncello…) or omit it altogether.

The batter must be soft, so it can be easily poured into the molds. If it’s too dense (because the ricotta used is dry), add a little milk or liquid cream.
