Tips and Variations
If you don’t use the glaze, you can simply sprinkle the muffins with powdered sugar.
Choose an organic lemon or one with edible skin.
You can replace the oil with butter (2.5 oz) melted in a pan or in a bain-marie.
Adjust the baking time according to your oven, the muffins should be slightly golden and dry inside (do the toothpick test to check).
